Cutting through Bolts and Bones
Recently, some people have been inquiring if they can do the kinds of things with their custom Kramer that was demonstrated on the CBS Sunday Morning program.

All of my knives, including the bolt cutting knife seen on CBS, are heat-treated exactly the same. The difference between the kitchen knives built for our customers, and the 10" Slicer built for the CBS demonstration, is mostly in the way the blade is ground.

The custom kitchen knives are ground at a more acute angle than the knife featured in the CBS program, which had several edge geometries within its length, therefore allowing the blade to cut the various media presented. So, where I needed the blade's edge to be strong enough to withstand cutting a bolt, it was thicker, and where I needed it to slice through standing water bottles, it was thinner.

So, the answer is no. You cannot take a Kramer kitchen knife, and expect to cut a bolt. Though it is true that one can cut poultry bones with my kitchen knives, one must be very careful how they go about the task, as technique is extremely important. A press cut should be used when cutting bones, not a hacking or chopping cut. The blade needs to be perpendicular to the cutting board and the edge carefully placed against the bone then even pressure is applied until the bone is cut.When done incorrectly, the blade can chip or dent.
