1. The Lottery

We select names from the email list chronologically and randomly approximately every six weeks. We will email you if your name is selected.

If we pull your name then you get to design your own knife at current pricing--you choose the type of steel, the pattern, and your own block of wood.

No payment has to be made to participate in the Lottery.

The last Lottery was: January 30, 2012

2. Custom Ready-Mades

Occasionally we will have finished custom knives for sale.

These will be a mixture of straight steel and simple pattern Damascus. We're doing this to make more knives available and streamline the production process.

We will notify the email list when these are available with instructions.

Licensed Designs made in Japan

These knives were developed so that you can have a similar experience as with my custom knives, at an affordable price, without the wait.

Designed by Bob Kramer.
Handcrafted in Japan by Zwilling J.A. Henckels.

My goal, as always, is to make the best kitchen tools possible. As the demand for my custom work has increased over the last few years to a level that far exceeds my production capabilities, I searched for a partner who could accurately produce my designs in carbon steel.

I chose Zwilling J.A. Henckels, who has a strong 200+ year history and tradition of building quality carbon steel knives. My designs combined with Zwilling's production and state of the art technology has resulted in an 'old meets new' manufactured line without compare.

Zwilling and I are proud to bring Carbon knives back to the market--and better than ever.

These knives are built to the same specifications as my custom knives, with high quality 52100 carbon tool steel, 60-61 HRC, brass bolsters and real wood handles.

So, what's the difference? These knives are handcrafted by artisans in Seki City, on a production line whereas I handle my custom knives from start to finish. Of course, there are subtle differences.

These knives are handmade from start to finish, with just a few industrialized processes which expedite the manufacturing of the blades.

It's the best of high-tech manufacturing combined with hand finishing that allows us to bring you these outstanding reproductions at an affordable price.

These knives have a Lifetime Warranty from Zwilling J.A. Henckels®. View the warranty information.
